What you'll need

150g blanched almonds
100g pitted prunes
100g dried apricots
100g pitted dates
350g mixed dried fruit
125g light muscovado sugar
100g carrots, grated
2 medium eggs, beaten
100g breadcrumbs
50g plain flour
1 tbsp ground mixed spice
250ml Guinness or stout
40g bitter chocolate, grated
100g lightly salted firm butter, plus extra for greasing
Rosemary sprigs, to decorate
Caster sugar for dusting
