How to make a Christmas cake

Follow our recipe for a delicious easy-to-make Christmas cake

Serves 12
Takes 40 minutes to make, plus two and a half hours cooking


For pre-soaking
350g sultanas
200g raisins
100g mixed candied peel
150g dried apricots, chopped
100g blanched almonds, chopped
50g glace cherries
1tbsp light muscovado sugar
200ml whisky
2tsp Angostura bitters
Juice of 2 oranges
1tsp each of ground nutmeg, cinnamon and cloves


For the cake
250g butter, softened
250g light muscovado sugar
250g self-raising flour
5 eggs, lightly beaten

As a tasty addition to your cake why not serve with a couple of scoops of Carte D'Or Rum & Raisin ice cream.
