Rufus Roberts of Sutton Seeds. “We have grafted varieties such as ‘Conchita’ and ‘Elegance’ on to rootstock and they are selling like hot cakes. Our ‘Hundreds and Thousands’ also sell well as they fruit prolifically.”

Raymond Blanc of Le Manoir aux Quat’Saisons. “For its good balance of sweetness and acidity I like ‘Japanese Black Trifele’, while ‘Black Cherry’ is one of the sweeter varieties with a classic cherry flavour.”

Orlando Murrin, chef/owner of gastronomic B&B, Le Manoir de Raynaudes, south-west France. “My favourite is a lush, largish variety called ‘Kopiah’, which comes from America. I grow it on cordons. Look out in French markets for a wide selection of heirloom varieties. Buy dense, bushy plants and avoid the leggy ones.”
