Gas hobs

What is it?
Cast-iron gas burners mounted on a stainless steel or glass surface. Can come in a range of sizes, including four-, five- and six-burner options. Many hobs have a wok burner, too.

Pros
The professional cook's favourite - controllable, energy efficient and quicker to heat up than a ceramic hob. Works with pans made from any material. Great for wok cooking. As responsive as an induction hob for less cost.

Cons
Needs a mains gas supply. Less sleek than ceramic and induction hobs, and harder to clean as the iron and enamel supports need regular scrubbing. Residual heat takes a long time to cool down.

Best for
Cooks who want a responsive hob, and people who regularly use non-standard pans, such as woks and griddles.
