Induction hobs

What is it?
Ceramic glass surface that provides heat through an electromagnetic field when a pan with a ferrous (steel or cast iron) base is placed on it.

Pros
Provides instant heat and is easy to control. The hob itself never heats up - only the pan when it is on the cooking zone - making it energy efficient and safe. Easy to clean as spills don't burn on to the surface.

Cons
Only works with certain pans, so you may have to invest in a new set. Will only work with a flat-bottomed wok. More expensive than other hobs.

Best for
Cooks who like speed and controllability. Safe, so ideal for households with kids, and great for energy efficiency.
