A roast dinner conjures up visions of family or friends joined in celebration. A good roast is easy to prepare and needs little tending, especially game that becomes tender when cooked slowly on a gentle heat. But roasting is not always slow – shellfish wrapped in ham, or soft fruits basted with a luscious marzipan will cook in minutes. Basically, roasting refers to any dish cooked in an enclosed oven with no liquid other than fat. It is also used to caramelise the natural sugars in fruit and vegetables.
